Uncle Eduardo's Ceviche

SERVES 6 

INGREDIENTS:
1 kg Pescado Blanco (white fish cut into pieces and rinsed in salt water)
1 kg Cebolla (red onions sliced then divided very thin and rinsed in salt water)
1 kg Limon (small green limes)
100 g Ajo (whole garlic chopped)
100 g Cilantro (chopped fine)
100 g Leche Evaporado (condensed milk)
1 Rocoto (same size and shape as a red bell pepper but very hot chopped)
Sal (salt)
Pimiento (black pepper)
Ajinomoto (msg - optional)

PREPARATION:
Put fish and onions in a large bowl
Add large dashes of salt, pepper, and msg
Squeeze in lime and mix carefully
Allow mixture to sit and 'cook' one hour
Add dash of milk
Add cilantro and garlic
Add additional spices to taste

SERVE WITH:
Choclo (big corn on the cob boiled)
Camote o Papas (various potatoes boiled)
Yuca (similar to a sweet potatoe boiled)
Cancha (fried choclo corns, like popcorn but not popped)
Yullo Regalan (young seaweed chopped)
Lechuga (Lettuce)
Rocoto Molido (hot red pepper compote)
