Robyn's Plum Pudding

SERVES 10-12 

INGREDIENTS:
250 g Raisins
250 g Sultanas (Big Raisins)
250 g Currants
250 g Mixed Citrus Peel
250 g Melted Butter
100 g Grated Apple
80 g Glazed Ginger (optional)
1 Loaf White Bread Crumbs
1 1/4 C Plain Flour
1 Egg
2 C Brown Sugar
1 t Lemon Peel
2 T Brandy
1/2 t Nutmeg (Mixed Spice)

PREPARATION:
Mix all together in a bowl with hands
Cover bowl with Calico
Leave for a couple days
Splash with extra Brandy each morning and night
Wrap in Calico and place into boiling water
Boil for 6 hours
Open it up 
Divide and serve w/ Brandy Butter Sauce

Brandy Butter Sauce

INGREDIENTS:
4 oz Confection Sugar
4 oz Butter
1/2 t Vanilla
2 T Brandy

PREPARATION:
Beat Butter + Sugar
Add Brandy + Vanilla
