Chef Tua's Bolonaise Sauce

Ingredients:
1 kg Prime Mince (beef, lamb)
2 Carrots (peeled and grated)
2 Celery (grated)
2 White Onions (diced)
6 Cloves Garlic (chopped and diced)
1 l Red Wine (full bodied)
600 ml Balsamic Vinegar
450 ml Whoel Peeled Tomatoes
6 T Tomatoe Paste
1 Handful Sugar (castor)

Preparation:
Blend all vegetables in blender.
Sweat blended vegetables with garlic until cooked.
Add mince and cook until all mince is colored.
Place wine, vinegar, and sugar together in another pot and reduce by 1/2 and add to main pot.
Add tomatoes and paste and boil for 1 1/2 hour or until the sauce is at a good consistency.
Add salt, pepper, and herbs.
